Vines are trellised in VSP on the sloped of Somerset West, overlooking False Bay. Hand harvested on the 16th of January 2007 at 18.3 degrees balling from lush green and healthy vines. |

VINIFICATION: |
Grapes were whole bunch pressed on a slow, gentile pressing thus releasing only the quality free run juice. The juice was cold settled for 2 nights, after which the primary fermentation started. Fermentation and the 9 month maturation occurred in second fill 300 litre French oak before the initiation of the secondary bottle fermentation. The wine was left o its lees for 11 months before disgorging. |

TASTING NOTES: |
A mousse of fine, lively bubbles enhances the light straw colour and brings forth a nose of lime, orange blossom and red apple. From entry, through mid palate and lingering aftertaste, the wine dances an enticing path with the teaser. |
