VINIFICATION: |
Grapes were chilled before being sorted and whole bunch pressed (to 0.5 bar pressure and juice recuperation was 520 litres per ton) into stainless steel tanks, settled for 3 days and then inoculated with selected yeast cultures for fermentation. Malolactic fermentation was also completed and the wine spent 9 months on the gross lees (being stirred weekly). The wine was then bottled to undergo its secondary fermentation and spent 18 months in the bottle before being disgorged. |

TASTING NOTES: |
Straw like in colour, with a fine vibrant mousse, this wine lends itself to the saying that life’s every day is worth celebrating. The aromas of red apple, melon, citrus fruits and freshly baked nut breads follow from nose to palate - ending in a full yet refreshing aftertaste. |
