The grapes come from a single, 1.2ha block on the Somerset West hills. Crop was kept to 8t/ha. Leaves were plucked in mid November 2006 on the morning sun side to enhance ripening. Picking was done at the end of February 2007. |

VINIFICATION: |
Grapes were sorted before and after destemming, crushed and taken to an open stainless steel fermenter. Natural fermented wine between 20°C and 26°C and left on the skins for 12 days before being pressed. After malolactic fermentation, the wine spent 23 months in 100% new French oak before bottling. |

TASTING NOTES: |
A rich heart reflected in its deep garnet centre. Flavours abound with pencil lead cedar wood, licorice, cardamon with a mulberry finish that lingers lusciously on the palate. |
WHEN TO DRINK: |
Drink form 2010 and it looks as though it will still mature beautifully up to 2017. |

Cherry crusted Warthog fillet, satimbocca, ossobucco lentil lasagna and oxtail with cepe. |
