A biodynamic approach to winemaking focus on farming with the earth and its movements, as opposed to using a purely scientific, nutrient-based approach. We refrain from using any chemical pesticides in the vineyard and winery and adhere to strict regulations for common additives like sulphur and fining agents.
“It is therefore ideal to harvest fruit during a waxing or full moon,” says Jasper our cellar master. The vines push their energy upwards, into the shoots during the growing season and concentrate in the bunches during harvest. “It’s like the plants exhale,” he says.
For us, this made the past week particularly special as we picked the grapes of, amongst others, the Ou Steen Chenin Blanc, Clos de Ciel Chardonnay, Ekliptika and Misterie vineyards. For our ultra-premium wines, the timing was perfect this year.
